Quinoa Lentil Mushroom Vegetarian Meatballs

One thing’s for sure, you can always find these two ingredients in my food pantry…

A big bag of quinoa and cans of lentils!  So I decided to create a delicious recipe using these two versatile and delicious ingredients.

Now, I wanted something that was bite-sized and perfect for sharing, so I came up with the Quinoa Lentil Mushroom Vegetarian Meatball recipe.

Lentils are a great meat alternative and quinoa is a popular superfood full of health benefits.  Incorporating lentils and quinoa into your vegetarian meals is a great way to fuel the body as both ingredients are packed with protein, fibre, iron, and folates.

Ingredients:

  • 1 can lentils
  • 1/2 cup quinoa
  • 1/2 package mushrooms
  • 1/2 medium sized white onion
  • 2 cloves garlic
  • 1/2 cup parsley
  • 1 tsp of salt & pepper
  • 1 tsp of onion powder
  • 1 tsp of Old Bay Seasoning
  • 1 cup bread crumbs

Ingredients

Process:

Begin by tossing chopped garlic and onion in a large pan.  Once the onions begin to turn translucent, add the mushrooms.  Add the can of rinsed lentils and spices.

I always have quinoa sitting in the fridge ready to be eaten, but if you don’t have quinoa already prepared, then start cooking the quinoa according to the package and then add it to the pan.  Once everything is cooked, remove the pan from the heat and let cool.

Once the mixture has cooled, transfer into a food processor.   Add the Italian parsley.  Pulse until the ingredients are well mixed and easy to shape.  Start forming the meatballs.

TIP:

I highly recommend making the meatballs small to medium sized.  The smaller the ball, the better they will cook and crisp up on the outside.

Roll the meatballs in the bread crumbs. Then, you can either pan fry or bake these quinoa lentil meatballs, I personally like to lightly pan fry the vegetarian meatballs. Once the meatballs have a golden and crispy outer crust, they should be ready to serve!

These meatballs are great as party appetizers served with a marinara sauce or served with spaghetti and topped with tomato sauce. Yum!

DIY PARTY TIP:

Do you want to make the cute little party picks, like I did in these pictures? All you have to do is cut colourful paper into triangular shapes. Then attach the paper triangles to toothpicks using a small amount of glue from a hot glue gun.  Remember to let the toothpicks dry before sticking them into the vegetarian meatballs.
