I don’t know one person who doesn’t enjoy a flavorful taco for dinner! Every week I look forward to taco night or more commonly known as, Taco Tuesday! Here is my favourite way to make vegan tacos, they’re super easy and delicious!
1 head cauliflower
1/2 white onion
1 cup cremini mushrooms
1 can black beans or red kidney beans
2 cloves garlic
Taco Shells (I typically use Old El Paso)
Wash and chop cauliflower into tiny pieces.
Chop the onion, garlic and cremini mushrooms.
Warm up oil/water in a pan on medium/high heat, then add chopped garlic and onion. Once garlic begins to brown, add the cauliflower. When the cauliflower begins to soften, add the mushrooms and beans. Sprinkle with the taco seasoning and hot sauce (optional). Let simmer.
Warm up taco shells according to instructions.
Dress with your favourite toppings.
