The words “Sloppy Joe” bring back so many childhood memories. I used to love this meal when I was a kid. Just because this dish typically calls for ground beef, doesn’t mean we can’t enjoy this dish too. This is my Vegan Sloppy Joe recipe. Enjoy!
For those of you who are unfamiliar with sloppy joes, it is a sandwich consisting of ground beef and onions, and other seasonings served on a hamburger bun.
- Slider buns
- 1 can of lentils – rinsed
- 1 small white onion or 1/2 large onion
- 1 cup cremini mushrooms
- 1 cup green and/or red peppers
- 4 garlic cloves (I love garlic, feel free to add less)
- 1tsp paprika
- 1tbsp chilli powder
- 1 tsp yellow mustard
- 1/3 cup ketchup
- 1 tsp salt
- 1 tsp black pepper
- dash of worcestershire sauce
- Sriracha (optional)
- 2tbsp brown sugar
- 1 cup prepacked coleslaw
- 1tbsp Vegenaise
- 1tsp lemon juice
- Salt & Pepper for taste
Begin by cooking the garlic and onions in a large pan on medium heat, until the onions begin to turn translucent. Add peppers and then add mushrooms. Once the mushrooms begin to shrink, add the lentils.
This is when I like to add all the seasonings, including ketchup, mustard, sugar and worcestershire sauce. I personally like spicy food, so I typically add Sriracha to this dish but you can omit this ingredient from the recipe.
Let everything cook on medium-low heat until the sauce begins to thicken.
While that is cooking, prepare the coleslaw topping. Mix all the ingredients in a small bowl.
Once the sauce has thickened, pop the burger buns in the toaster. Serve the “beef” mixture, with the coleslaw on top and enjoy!
