I admit it! I have an addiction with Mac & Cheese! So when I adopted a plant-based diet, it was vital that I find a Mac & Cheese recipe… and FAST.
Then I came across this BuzzFeed post and decided to give their recipe a try. I wanted a really cheesy and creamy flavour, so I altered the recipe by adding nutritional yeast and almond milk.
1 whole white onion
1 large carrot
2 boiling potatoes
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 teaspoon of salt
1/2 cup of soaked cashews
1 teaspoon of nutritional yeast
1 cup almond milk
Begin by peeling the carrot and potatoes
Chop the potatoes and add them to a pot. Boil for 2 minutes.
Chop the carrot and add it to the boiling pot. Cut the peeled onion in half and add it to the pot. Cook until soft.
Drain and save the water.
Blend the soaked cashews and veggies, with 1 cup almond milk, 1/2 cup of the boiled vegetable water and seasonings including, the nutritional yeast.
In a separate pot, bring water to a boil and add the macaroni noodles.
Cook according to package
Combine the cheese sauce with the noodles. Mix well.
This recipe was really easy and it definitely looked like traditional Mac & Cheese. I would recommend this recipe if you’re looking for a healthier version of Mac & Cheese.
