Vegan Blueberry Muffins with a Raspberry Jam Explosion

When I make these muffins, it doesn’t take long for all of them to disappear!  This isn’t just any blueberry muffin recipe, these muffins are 100% vegan and have a raspberry jam center!

Here’s how to make these vegan blueberry muffins, with a raspberry jam explosion!


DRY INGREDIENTS
2 cups of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of vegan butter
1 cup of sugar

WET INGREDIENTS 
2 chia eggs
1/2 cup of almond milk
1 teaspoon of vanilla
2 cups of blueberries
Raspberry Jam

Topping (Optional)

1 teaspoon of sugar
1/4 teaspoon cinnamon


Preheat oven to 350 degrees.

In a large bowl, whisk all the dry ingredients together.  Then start adding the vanilla extract, almond milk, blueberries, chia eggs, and the softened vegan butter.  Mix until batter becomes ‘sticky’.

I found the recipe for the muffin batter on Pinterest (I forget the exact source), but their version was not vegan, so I had to veganize it and add a twist with the jam center!

Grease a muffin tin and begin filling the tin with the muffin batter.  Then place a dollop of raspberry jam to the batter, adding the remaining muffin batter on top of the jam.

This is optional.  Mix together 1 tablespoon of sugar and 1/4 teaspoon of cinnamon.  Sprinkle the mixture over the uncooked muffins.

Place the muffin tray in the oven, baking for 30 minutes until the tops begin turning golden brown.

Take out muffins and let stand for 5 minutes.

    Wow, those look so delicious. Just one question, though. What are chia eggs? I’m familiar with using chia seeds to replace eggs, but not quite sure on the proportions. Usually, I just follow the recipe and add whatever amount of chia seed they ask for.
