My cousin recently purchased a vegetable spiralizer for me on my birthday. Ever since I figured out how to use this handy tool, I have been spiralizing everything! This Sweet & Spicy Zucchini Noodle recipe is so colourful and packed with flavour! You will love it!
- 2 large zucchinis
- 1/2 Red Cabbage
- 1 Cup Carrots
- 1 Cup Pineapple
- Sesame seeds
- Extra virgin olive oil
- 1 teaspoon Onion powder
- 1/2 Cup Vegetable broth
- 1 teaspoon hot sauce (adjust as desired)
- 1 teaspoon lemon juice
Begin by cutting up the red cabbage and carrots. Then use a spiralizer to make the zucchini noodles (if you don’t have a spiralizer already, then you need to purchase one immediately! They are super easy to use and pretty inexpensive).
Then, warm up the extra virgin olive oil and the vegetable broth in a medium sized pan, on medium/high heat. Add the cabbage and carrots. Then add the zucchini noodles and spices.
In a separate pan, add the pineapple slices (I love pineapple). Cook the pineapple on medium/low heat. You know the pineapple is done once it beings to turn a vibrant yellow colour.
This meal is so incredibly easy to make and it’s good for you! The entire dish should take about 15-20 minutes to cook. Instead of consuming all those carbs found in traditional pasta noodles, you are eating fresh, nutrient dense vegetable zucchini noodles!
Begin plating. Top the dish with sesame seeds and warm pineapple slices. This dish is surprisingly filling and super flavourful. The warm sweet pineapple slices paired beautifully with the crunchy cabbage and spicy zucchini noodles.
Zucchini noodles don’t take long to cook. To avoid mushy noodles, make sure the other vegetables have softened up before adding the zucchini.
