Whoever said brussels sprouts are tasteless and boring, never tried this recipe before! These roasted brussels sprouts will have you feeling like a kid again because you get to work with your hands. I make this dish all the time because it’s easy and scrumptious! This roasted brussels sprouts recipe is also perfect for those ‘Meal Prep Sundays’ because one batch can last you all week long! Win, win, win!
- 1 large bag of brussels sprouts
- 1 white onion
- 2 to 3 cloves of garlic
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- 1/2 a lemon
- 1 tsp garlic powder
- 1/2 tsp of thyme
- ½ tsp of salt & pepper
- 1 tbsp of extra virgin olive oil
- ¼ cup of vegetable broth
Begin by preheating the oven to 350 degrees. Then, start chopping the garlic and onion.
Wash the brussels sprouts. Chop each brussel sprout in half and place everything in a large mixing bowl.
Add the spices, EVOO and the vegetable broth.
Here comes the fun part! Roll up those sleeves and start mixing everything together in the bowl with your hands (remember to wash those hands first!).
Make sure to massage all the flavours in the brussels sprouts, using your fingers to rough up the leaves of each sprout. This will ensure that the brussels sprouts are covered perfectly with all the spices and it will also make the leaves crispy during the cooking process.
Lightly grease an oven dish. Spread the brussels sprouts out evenly across the baking dish and then place into the oven. Drizzle the juice of half a lemon across the pan, try to cover all the brussels sprouts.
Bake for approximately 30 minutes. Remember to flip the brussels sprouts after 15 minutes to ensure they cook evenly throughout.
