Oven Roasted Garlic Potatoes

I am sure everyone has their own go-to roasted potato recipe, but these roasted garlic potatoes are easy, flavourful and extremely filling.  Give them a try!

I love to roast potatoes along with other various vegetables for my Sunday meal prep.  These potatoes are so easy to make and taste great by themselves or paired with your favourite dish.  I personally like to smoother these potatoes in cashew cream, it’s to die for!


  • 4-8 large potatoes (you can use any type of potato!)
  • 3 cloves of garlic
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 tsp thyme
  • 1 tsp salt & pepper
  • 2-3 tablespoons of extra virgin olive oil

Preheat oven to 450 degrees Fahrenheit.  While the oven is heating up, start peeling the potatoes.   Then, cut into quarters. Spread the potatoes across a roasting pot. Drizzle some olive oil over the potatoes and then sprinkle all the seasonings on them.

Place in the oven and let it cook for 40-60 minutes, stirring around the half hour mark.
