Soft & Chewy Chocolate Chip Cookies – 100% Vegan

There’s nothing better than walking into a home and smelling freshly baked cookies! Well, I guess there is something better…

…Eating freshly baked cookies! Here is a simple recipe for extremely soft and chewy chocolate chip cookies.  These cookies are so delicious, your friends won’t believe they’re 100% vegan!

While browsing the web, I came across a post by Pinch of Yum and decided to veganize Lindsey’s chocolate chip cookie recipe.  These easy and small changes in the recipe replicate the softness while keeping the cookies 100% plant-based.

This recipe serves 10-12 cookies, depending on the size.

INGREDIENTS:

½ cup vegan butter

½ cup sugar

¼ cup packed light brown sugar

1 teaspoon vanilla

1 chia egg

1½ cup flour

½ teaspoon baking soda

¼ teaspoon salt

¾ cup  of dark (vegan) chocolate chips

PROCESS:

Begin by preheating the oven to 350 degrees.

Using a fork, cream the vegan butter and sugars together. Mix in the vanilla and chia egg.

Add the flour, baking soda, and salt. Mix together until you’re able to form a large ball with the dough  (like the photo above). Add the dark chocolate chips.

Roll the dough into small balls and place on a baking sheet lined with parchment paper.

Bake for exactly 10 minutes.  The cookies should look almost ‘undercooked’.  Let the cookies cool down for 15-20 minutes (if you can wait that long!). Then, serve and enjoy!

I had these cookies sitting on my kitchen counter last week during a St. Patricks day party and everyone devoured them.  My friends couldn’t believe the cookies were vegan!
