Now that it’s finally starting to feel like spring in Toronto, I decided to make a delicious quinoa salad that will be perfect for spring picnics or potlucks!
According to my weather app, this week is going to be sunny and warm. Yay! I hope everyone has the opportunity to enjoy the nice weather with your loved ones.
I love creating recipes that can be easily altered based on ingredients found in your fridge or pantry. This spring salad will be great for sharing, bring this dish to your family BBQ.
- 1 cup of cooked quinoa
- 1 cup broccoli
- 1 cup shredded carrots
- 1/2 cup diced red onion
- 1 cup chopped cauliflower
- 1 can of red kidney beans
- 1 cup chopped red pepper
- 1 cup chopped green pepper
Cook quinoa according to the directions listed on the package.
*TIP* I like to cook my quinoa in vegetable broth for some extra flavour!
Chop everything up and mix in large bowl. Add cooked quinoa to the bowl. Mix in your favourite dressing (I used a homemade avocado dressing – so easy and delicious!). Add salt & pepper to taste. Serve and enjoy!
